Apple-Cinnamon Breakfast Risotto



Ingredients:

  • 1/4 cup of butter (1/2 stick)
  • 4 medium Granny Smith Apples. peeled, cored, and diced
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 1/2 cup Aborio rice
  • 1/2 cup packed light brown sugar
  • 4 cups unfiltered apple juice at room temperature
  • 1 tsp vanilla 

Sauteed apples, cinnamon, salt and butter
Directions:
  1. Melt butter in large skillet over medium-high heat. add apples, cinnamon and salt. cook and stir for 3 to 5 minutes or until apples begin to release juices
  2. Transfer the apple mixture into crock pot
  3. Add rice and stir to coat
  4. Sprinkle light brown sugar evenly over top
  5. Add apple juice and vanilla.
  6. cover and cook on high for 2 hrs (mine took a little closer to 2.5 hrs to cook)
Serve and enjoy! I made a huge amount of it and I am having it as a morning snack this week! its great to grab and go. you just pop it in the microwave and warm it up and it is absolutely delicious heated up! Simple and Easy!

Cake Batter Energy Bars

Cake Batter Energy Bars


I love finding new recipes for Protein or Energy Bars. I think they are great as snacks and perfect for pre-workout and post-workout yummies! 

Ingredients: 
1 cup of rice crispies
1/2 cup oat flour
1 tsp of salt
2 tbsp of butter
5 tbsp of agave
packet of vanilla shakeology
optional: handful of sprinkles

Directions: 

1. Combine all dry ingredients and stir well

2. In a separate (large bowl), combine wet and stir to form a thin paste. (warm the butter up, so it is melted)

3. Pour dry into wet (not the other way around) and stir until evenly coated.

4. Line a baking dish or Tupperware container with a large piece of wax paper and pour the mixture into the dish. FOld the extra paper over the mixture and squish down as hard as you possibly can.

5. Stick in the fridge or freezer to harden before cutting into bars. (store in fridge or freezer)

Day in the Life of a Nurse - What I Eat?


As a Nurse, I don't always have time to eat during the day. I know it can be a struggle to find things to eat that are healthier, that are quick and easy to eat. I wanted to share with you what I usually bring. Normally, I have my sandwich for lunch.

I always have my shakeology shake either for breakfast or lunch depending on if I was able to grab breakfast.

I always have a zone bar. Chocolate Caramel Cluster is my favorite one.

Water
Its so important to have your water with you at all times!. I always drink at least 64 oz of water daily and that includes days I work! I know its a lot of water and I constantly have to pee but my body craves water.
