Healthy Pasta Salad

I am not a fan of mayonnaise based pasta salads. I know that it is fall and who wants to be thinking about pasta salad, since its mainly a spring and summer dish but this past weekend, I made this for the Dream Team Coach Retreat.






Ingredients:

Veggie Pasta or Wheat Pasta (I used both Veggie pasta with zucchini and cucumber puree in it and Wheat pasta)
Celery
Carrots
Olives
Olive Oil
Salt
Pepper
Garlic Powder


Directions:

1. Cook pasta as directed on the box.
2. Cut up celery into small pieces
3. Chop or Shave carrots
4. Cut olives into slices
5. Mix pasta with celery, carrots, olives in a large bowl
6. Add salt, pepper, and garlic powder (sprinkle on - to taste)
7. Add olive oil. (until pasta is lightly coated)

Serve cold and ENJOY!
